Ingredients

  • 2 packs of 204g veggie meatballs (we use Plan't from Colruyt)
  • 6 medium-sized potatoes
  • 1 large white onion
  • 50g butter
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 1 tbsp Liège syrup
  • 1 tbsp red wine vinegar
  • 2 tbsp flour
  • 150ml cream 7%
  • 1 stock cube for 40cl broth
  • 1 bay leaf
  • 1 tbsp dill
  • 1 tsp nutmeg
  • 1 tsp brown sugar

Method

  1. Peel potatoes and cut into chunks, then put into a large pot with cold water and bring to a boil. Once boiling, simmer for about 14 minutes (depending on how large your potato chunks are) or until well cooked through. Undercooked potato makes for gritty mash!
  2. Meanwhile in a dash of oil, fry the veggie meatballs in a sauté pan until browned, then set aside.
  3. Finely dice onion and garlic. In the same sauté pan, melt 1 tbsp (about 12g) butter, then on medium-high heat add the onion, salt it, and sauté until translucent. Take this time to prepare broth from a stock cube.
  4. Then add garlic and keep moving for another 2 minutes.
  5. Add Liège syrup and vinegar, then combine well.
  6. Mix in the flour, then slowly add the stock, ensuring to mix well with the ingredients. Add herbs and spices, as well as the meatballs, then cook for about 5-8 minutes until it starts to thicken. After this add 100ml cream, and stir occasionally.
  7. Around now, your potatoes should be cooked. Drain the water, then add salt and pepper to the potato. Add the remainder of the butter (about 40g) and start to mash. Then add the remaining 50ml of cream, and mash until a smooth and silky consistency. Add seasonings and spices as you wish. Cover with a lid.
  8. While everything is hot, this is a good time to prepare any vegetables on the side - frozen green beans or peas, for example. You can microwave these in a bowl with water, or bring to a boil in a pan. I prefer to microwave, then pan-fry lightly in butter, and if you have any, ground garlic.
  9. Top with dried dill for a punch of green and enjoy!

Make the meatballs yourself. This is often 50/50 beef and pork, but do it how you prefer. Add to 500g of minced meat a diced shallot, fresh parsley, and breadcrumbs or diced chunks of soaked stale bread. Bind with 2 eggs and form your balls. Coat in flour, then fry in butter until medium-cooked inside. Set aside and continue as above.
