What to serve it with?

Summer rolls are super satisfying as they are, though you can't go wrong with sides like edamame beans or pickled vegetables. And of course, some great sauces! We recommend soy sauce, hoisin, sweet chili, and for sure a homemade peanut sauce.

Leftovers

Spoonfeed meal plans save you money by using the economy of scale. Making the extras from dinner into a leftover lunch avoids spending out and extra time cooking!

Summer rolls are best fresh, though they keep fine to eat cold the next day. Just make sure to put cling film or greaseproof paper in between each one to avoid them sticking.

Ingredients

  • ~3 round 22cm rice paper sheets per portion (could be more, don't limit yourself)
  • 150g thin rice vermicelli noodle
  • 1 carrot
  • 1/2 cucumber
  • 1/2 red or yellow pepper
  • Fresh mint leaves
  • Soy sauce
  • Sriracha sauce
  • Hoisin sauce

Buff up your summer rolls with an extra veg and fruit. Here's some of what you could do:

Veggies: Cut the heart of a cauliflower into long strips, shred red cabbage, slice avocado, roughly chop lettuce, or julienne spring onion or daikon radish - there's plenty of options.

Fruit: Mango, pineapple, apple, and fresh peach add a punchy sweetness to the mix. Make sure to pair it with the right protein.

What protein should you put in your summer roll? Let the offers at the supermarket be your guide - that's what we do in our meal plans. Or simply follow your appetite! Here's just some of what you could do:

🏆 Fancy: Make a great homemade peanut sauce 🍯 +€0.65

Alongside hoisin, and soy sauce, level up your summer rolls with your own peanut sauce. Here's what we always make:

Mix 4 tbsp peanut butter, 1 tbsp light soy sauce, 1/2 tbsp rice wine vinegar, 1 tsp honey, 1 tsp sriracha (optional, for spice), 1 tsp minced ginger, and hot water to desired thickness and balance.

Method

  1. Make sure you have a clear table to use as an assembly space later.
  2. Start with your chosen protein, which will likely take the most time.
  3. Slice your carrot, pepper, and cucumber into long, 1cm thin julienne strips and set aside in your assembly space. Prepare any other vegetables that you have in mind.
  4. Rinse mint leaves and set aside.
  5. Add water to a saucepan and when boiling, add your thin rice noodle and cook according to packet instructions. The thinner it is, the quicker it cooks! Usually you don't need more than 3 minutes. Drain water when it has softened and set the noodles aside in a plate, trying to separate the strands so they do not clump together.
  6. In a deep enough plate, add boiling water. Now it's time to take turns making the summer rolls! Submerge a sheet of rice paper in the water for 3-5 seconds, just long enough for it to soften the paper, but not to make it too floppy.
  7. On a plate or board, lay down your wet rice paper. Place your ingredients at the bottom of the paper, leaving 3cm on each edge to make it possible to roll. Start with noodle, then vegetables, your protein, and finally top with the fresh mint. Don't overstuff the paper or it might tear.
  8. Fold the left and right sides of the paper halfway over the ingredients. Roll up tightly from the bottom; gradually until fully rolled.
  9. Serve with your chosen sauces - we recommend a choice of soy sauce, hoisin, and homemade peanut sauce!
  10. Eat and repeat until full! Enjoy!
