It's hard to beat a stir fry; they are filling, delicious, quick to make, and a great way to use a variety of healthy vegetables. What's more, they are stir fry is simple to do, easy to customise to a meal plan, and always great to eat the next day.

What to serve it with?

Ingredients
Noodles
- 250g noodles
- 1 onion
- 1 carrot
- 1 red pepper
- 2 garlic cloves
- 1 tbsp ginger
- Sesame seeds
- Vegetable oil
- Sesame oil
Sauce
- 3 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 2 tbsp hoisin sauce
- 5 tbsp orange juice
- 2 tbsp sesame oil
- 1 tbsp honey/maple syrup

🏆 Fancy: What noodles should you use?
From basic egg noodles to round udon and thick rice noodle, there's plenty to choose from. Stir fries are flexible and you can use any kind - just be sure to follow the instructions on the packet as some need to cook for longer!
Don't be afraid to push the boat out - stir fries are affordable, so it's a great time to spend a little extra on noodles. After all, they're the main ingredient!
Method
- Cut onion into big chunks, dice garlic and ginger, and slice carrot and pepper into long julienne strips.
- Prepare the sauce which you'll add at the end, simply by mixing all the ingredients together in a small bowl. Set aside.
- Boil the kettle, fill a saucepan halfway with the hot water, then add your chosen noodles to the boiling water. The cook time here depends on the thickness of the noodle, usually a few minutes. When cooked, drain and set aside.
- As the noodles boil, that's a great time to prepare your choice of protein if you have not already done so.
- In a wok on high heat with a neutral oil, add onion, sprinkling salt and pepper on top. Keep stirring (hence the name stir fry, of course) until slightly softened. Add garlic and ginger and stir for 1 more minute. Add carrot and stir for 2 minutes, then add pepper and stir for another 2 minutes.
- Add in the noodles and then the sauce on top, and quickly combine everything together, including your reserved choice of protein. Add a splash of sesame oil, the dark soy sauce, and keep moving for 1 more minute.
- Serve with sesame seeds on top, and if you like, chopped peanuts or the green of a spring onion.
